Healthy Bounty Balls

Delicious sugar free homemade healthy bounty balls, with a yummy moist coconut inner, wrapped in delicious dark chocolate, these are better than store brought

Healthy  Bounty Balls are delicious, I think they taste better than the real thing, although I have not had a brought one for many a year and would probably find them sickly sweet now!

What I love about these homemade bounty balls is that they hardly contain any sweetener at all, the natural sweetness of the coconut only needs a very small amount of rice malt syrup to make them sooooo yummy!

Before going sugar free these had to be my favourite chocolate bar I loved the moist coconut inner, wrapped in delicious milk chocolate, but when you look at the sugar these contain NO WAY am I having them ever again !!!

So obviously I had to make my own,  I mean these little treats have to be enjoyed now and then, and being sugar free does not mean you have to eat boring tasteless food.

These are SO quick and easy to make, the only time-consuming part is rolling the balls and dipping them in chocolate, but its a great job for the kids and these make wonderful gifts.    Get the kids to make cute little cards and package them up into cellophane bags, perfect for them to give as gifts  to teachers, grandparents etc.

Notes – if you are in a hurry, make them in a slice and just pour the chocolate over top and then cut into small squares.

Ingredients
  • 2 cups coconut (sulphite free)
  • ½ cup ground almonds (optional)
  • 3 tablespoons rice malt syrup
  • 2 tablespoons coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons coconut milk or water
  • pinch of salt
Instructions
  1. melt butter or coconut oil and rice malt syrup together
  2. Add all ingredients to a blender or food processor and mix until well combined
  3. Roll into balls and set in the fridge or freezer
  4. melt chocolate and coconut oil together
  5. Once melted and smooth, take your bounty balls out of the fridge and dip in the chocolate
  6. place on a tray lined with baking paper and leave at room temperature to set
  7. I keep mine in the fridge and they will last up to 2 weeks
