This Blueberry Overnight Oats is so quick and easy to throw together and such a nutritious and delicious way to start your day.
Blueberries are fantastic little powerhouses filled with nutrients and vitamins such as Vitamin C, Vitamin K and Manganese, copper as well as Dietary Fiber, not to mention numerous phyto-nutrients which act as antioxidants and anti-inflammatories, elevating blueberries to the SUPER FOOD we know they are.
In our house we always have bags of frozen blueberries in the freezer ready to be added to anything, they have to be my favourite fruit in terms of nutrition they offer and I try to add them to as many things as I can.
I have three blueberry bushes in my garden, but I have never had much luck producing any fruit, typical, it’s the one fruit that I want to produce copious amounts so I can freeze my own and have a fresh supply all year round!! I’ll keep trying, but for now, I will have to continue buying them!!!
Blueberry overnight oats is YUMMY and so easy to prepare and most of all provides a fabulous healthy breakfast, light meal, snack or healthy dessert with fabulous colour!!! Whats not to love!!!!
If you forget to soak the oats overnight, Don’t worry, just use muesli/granola instead.
The 12 hours cook time only indicates the overnight soaking, otherwise it only takes 5 minutes to prepare
Try more REAL yummy overnight oats like apple crumble overnight oats or Overnight Oats Berry Parfait or Tropical Overnight Granola
- half a banana
- ¾ cup fresh or frozen blueberries
- 2 tablespoons chia seeds
- ½ cup rolled oats or granola
- ½ cup of your favourite sugar-free yoghurt
- ½ cup milk
- Combine banana, blueberries, chia seeds, oats or granola 2 tablespoons yoghurt and milk and blitz with hand blender.
- Put in the fridge overnight
- In the morning eat as is or layer with more yoghurt and top with sliced banana
